The Vermentino IGT Toscana 2023 by Fattoria Fibbiano is an organic white wine with a straw-yellow color and green reflections.
It offers aromas of lavender, lemon balm, and thyme, with a fresh, mineral, and well-balanced taste.
Hand-harvested in early September, the grapes come from vineyards at 120m altitude, grown on marine fossil-rich soils.
The wine undergoes cold maceration, fermentation at controlled temperature, and 6 months of aging in cement tanks, followed by 6 months in bottle. Perfect with fish and vegetable dishes.
