In 1983, Cesare Ruggeri launched its entry into the field of sparkling wines, and today it boasts an extraordinary heritage of expertise- -know-how spread over a vast array of its own production secrets, both great and small; a deep understanding of its entire growing area and its vineyards; and an inborn sensitivity to the health and well-being of each vineyard.

Incalmo rediscover the most authentic and ancient traditions of the Treviso countryside, where sparkling expressions were historically produced by exploiting the phenomenon of secondary fermentation in the bottle—the only way to create wines with light perlage before the advent of modern sparkling techniques.

For Incalmo, secondary fermentation takes place spontaneously in the bottle: as the temperature rises, the yeast resumes its work, continuing to transform the residual sugar still present.

The natural deposit of a thin residue at the bottom of the bottle gives the wine its typical straw-yellow haziness and is responsible for its fragrant aromas of crusty bread, butter, and dried fruit. The taste is dry, crisp, and fresh, with no residual sugars.

The perlage is often subtle, lively, and delicate. A wine that is easy to drink yet never banal, as it develops complexity over time and across different vintages, thanks, in part, to the residue that helps preserve its fragrance.
